Tasters choice is probably the only instant coffee I can tolerate, that and Taiwanese or Korean Instant Coffee is pretty good Maxim is one thats decent it's a coffee/sugar/cream mix in 1 packet so pretty simple.

Preppers prefer it. I think it can be vacuum packed and stored a long time without degradation. I am not sure regular beans would hold up in this use case. Could be a reason for the higher cost (higher demand, many people now with mindset of supply issues and this coffee is apocalypse-handy?; definitely convenience on getting a cup of Joe in a situation just add hot water)

The extraction process is involved, look it up, the more flavor components they preserve the costlier it is.

That being said I only use it to spike my hot cocoa

Nah.
Try Mt. Hagen from Germany. Freeze dried is preferred.
Many stores use it as a generic and you can get it for close to $4 a jar.

HEB in particular does this for their "central market" brand.
