For example, I can have a box of gloves delivered from Walgreens 'same day' for $7.49 each, on instacart the same gloves are $26.50. That's just absurd, considering instacart only pays the $7.49. I find myself using them less and less, even with all the discount codes.

In my area on Instacart grocery prices are 15% more than B&M stores. If you have Express membership (free with previous Chase offer), delivery fee would be 5%, plus optional tips for the driver. So the total inflation is about 25% - 30% for delivery order.
If you choose store pickup, delivery fee and tips can be waived plus 5% credit back. So the price inflation is reduced to 10%.
Either way, with coupons like 20 off 30 (66% off) or 20 off 40 (50% off), still worth it if the total order amount is right. Such coupons are not rare. I saw them in my inbox at least once per month.
One thing I like Instacart is their refund policy regarding coupon usage for items not in stock. They DO NOT reduce coupon discount when doing refund. For example, you put order for 3 items 10 each, and used 20 off 30 coupon. Out of pocket you pay 10 plus fee/tips. However one item is out of stock, and they refund 10 to your account. They won't devalue the coupon when doing refund. This can be quite handy if you know some item that's easy to go out of stock, which can be used as filler to get extra value of coupon.
That means just ordering $3 of stuff since the meal is almost $9 gets you the free meal.
If you order ice cream at worst you spend $3 on ice cream and best case they incorrectly sub ice cream with something else (ice cream machine is broken) and you get free meal and the item refunded.

Even if it's 20-40% off coupons, out of stock merchandise does not get taken back from the discount
instacart grocery prices are usually in-store prices with the exception of convenience orders and costco/club stores.
Instacart is super generous in that if a refund does not us the full $20 off 30 discount you actually can use the remaining few dollars on a new order.
doordash is also crazy generous in that they will refund full price for an item even if your order total is $0 after discounts

The $12+ spend can include the 10pc Nuggets? I figured it'd have to be $12+ in other items before it triggered the free 10pc.

Printer ink is non-replaceable because they pick the wrong one and it's useless.
medicine is not replaceable if you can find expensive over the counter as well. Rogaine is around $60 and if it's out of stock good one to use

Not only is it free if an item comes wrong (shopper picks the wrong thing or gives you something you didn't order), you get refunded IN FULL for said item. If enough is wrong you get full refund, even though you paid nothing
So they are not just free they are actually paying you sometimes after you got free stuff
If you combine with the $100 gift cards for $85 you save even more money
