EDIT: Wow, just read up on it. couple questions:
1. Once flashing Tasmota firmware, does the device still function with the intended service, i.e. it can still work as intended with Alexa, Google Assistant, etc and that all this does is just bypass cloud integration if you choose to?
2. What items should I keep an eye out for here in SD that are Tasmota compatible? What have you found here?

I've never attempted to use HomeKit simply because most of my devices aren't compatible with HomeKit, but it sounds like HomeBridge solves this problem?

Zojirushi NP-HCC10XH Induction Heating System Rice Cooker and Warmer: only connects the power. You still need to manually select how to cook rice and how long time. How can I control this cooker hands free with this smart plug? Any info is appreciated. Thanks!
If all it take is 1 button push to start a particular mode then you could use a button pusher.
As an example if you have a theater setup in the basement. You can monitor the energy use of the projector. If it is using more power most likely mean you'll be watching a movie soon so you can have curtain close, lights dim/fade off, floor lights goes on, etc.
