They don't have a shelf life of 10-25 years though.
According to the directions, it takes 30 cups of water to rehydrate the full can. That's 15 lbs more weight once it's rehydrated.
To be fair, I can't find frozen potatoes in my grocers freezer section so maybe I'll be needing this sooner than later lol

Not the same. The Walmart product is a ready to eat shoestring potato product, like chips. The Amazon product requires rehydration w/water to make hash browns, etc.

Shelf life has more to do with flavor and texture, than actual food borne illness risk. It's also greatly influenced by how the food is stored. Moisture, temperature, air, etc. all affect the shelf life. The box didn't "lie", it's just the manufacturer's suggestion/recommendation for when their product should be consumed by for best quality. It's subjective.

Moisture creates an environment for mold and bacteria. Obviously, dehydrated potato flakes will have a much longer shelf life than fresh potatoes (which are about 80% water). Freeze dried potatoes (which Augason Farms also sells) have even less moisture content than dehydrated potatoes. One main difference between supermarket dehydrated potatoes and Augason Farms is the packaging. Thus, even though you may be enjoying those 10 year old supermarket dehydrated potatoes (based on your anecdotal statement), I'm willing to bet that ultimately they will not last as long as the Augason Farms (OP item) dehydrated potatoes, in terms of taste, texture, and spoilage. Especially since you've opened the container, exposing the contents to moisture in the air.

Of course, if food smells bad, looks different, the package has ballooned in size, etc. you should not eat it.
