Z690 is the only chipset that does CPU overclocking, but there isnt that much overclocking room, so its a bonus and not needed. It the premium and most expensive, its better than AMD's x570. Boards tend to be $200+
H670 has the same premium features as Z690 but no overclocking, not many of these motherboards exist right now.
B660 is what most people recommend you buy, no CPU overclocking but affordable $130ish boards that will work well for most users.
H610 is the very budget chipset, no RAM overclocking, so max 3200Mhz supported, basic features, boards tend to be $100

12600k is better than the 5600x in multi-threaded performance and single threaded performance. As far as power consumption goes the 12600k is more power efficient in gaming, and even efficiency to the 5800x in multithreaded performance.
