Loling at "Rocking Santuko". In other words, a Chef's knife.

I'd love to have been at the focus group.

Customer: "I want a Santuko like Rachel Ray uses."
Customer a year later: "This Santuko is too flat, I can't rock chop with it."
Henkels: "Meet the new Rocking Santuko."
Haha yeah Idk what they were thinking, in my OP I mentioned:

the santoku is not much of a santoku, but it makes for a great mincing things

The 7" zwilling pro has a really thick spine, with the wide taper causing carrots to break while chopping close to the bolster/heel. (One of my pet peeves).

Does this "slim" model have a more narrow spine?
Which 7" pro knife? Chef, Santoku, Other?

For reference, the Slim's spine is 2.5mm [cutleryandmore.com] vs 3.0mm for the 8" chef [cutleryandmore.com] and the 6" chef [cutleryandmore.com], couldn't find a traditional 7" pro.

I have the rocking knife. It has far more of a curve than a standard chef or santoku. It is phenomenal for chopping herbs. I use my often for that purpose and love it.

Rocking Santoku and the "slim" Chefs have both been selling for $80 this year. This deal saves $10. The "Slim" Chefs marketing often mentions women and those with small hands. The knife guys frequently mention Cangshan as an excellent value.

Slim knives should be mainstream. They are lighter, cut easier, easier to handle, and more of a joy to use.

The Chinese vegetable cleaver is misunderstood. They are very thin and effective for reasons stated above. Great knives.

These knives are a much better choice then most knives on slick deals and in department stores.

Not 'super slick' price, but the important thing is putting money towards a knife that isn't stupid/wasted money. I guess you could say a basic 'slick' deal on knives worth owning is effectively 'super slick'.

The other thing to know about these knives is they are 7" long, both of them. 8-10" is a typical good size chef knife for a male. That said, I have a 7" thin santoku and reach for it a lot. Easy to manuvour and do the cuts I need. I cook for 1-2 people normally.
Buy a $30 Made in China knife with almost the same steel if sharpening is not a problem, from someone who owns many premier+ SHUN knives, and Made in China ones including a 12 peice set of Gunter Wilhelm for $220 + tax from costco.

Resin handles cracked on 7 of my knives and 3 have corroded rivets. Knifes have been hand washed. Warranty fix requires owners to pay all shipping costs with USPS tracking with packaging constraints. Finally, the replacement is stated to take 6 weeks. I regret owning these knives.

The weight of the knife is not your enemy as long as you understand how to make use of it. Slim version benefit when one need to use the knife for a long time, but for daily cooking may not be that helpful.

Maybe a dumb question here from an amateur chef... If I already have the 8 piece Zwilling Pro set (same handles) are these two knives part of the set or something additional and useful?

that's comforting. i'm not wanting to drop money for both knives, as I dont really want the santoku. Did you mean it has been $80 for the slim, here at C&M as well?

There are no dumb questions, how else do we learn? Wink

From what I've seen any block set should come with a traditional 8" chef's knife, which is arguably the most versatile kitchen knife. That being said both these knives are chef's knives but are slightly different with their own pros and cons vs the one you should have, and aren't in any Zwilling sets I've seen.

So long story short:
  • No, I don't think you have this in your set.
  • No, you should already have a chef's knife and though these are slightly different, their addition would not have great benefits.

Similar to what the other member said, these 2 knives are not part of any set I am aware of. Both of them were sold by Bed Bath and Beyond during holiday season individually for $35-$40 after coupon in the past. Regarding to if these can be something additional and useful, it depends on your personal preference. Personally, I always use a separate knife and cutting board/mat to cut raw meat to keep my salad clean. But I would probably not want to pay so much for my second chefs knife. My own raw meat knife is an inexpensive Tramontana Santoku. I am actually very impressed with its value on performance over price and ended up buying Tramontana forged knife sets as gifts to family and friends. I was able to get a 6pc set for $29 last week.

You, my knife-wielding friend, are doing something wrong. That's the mark of a knife that had been joy-riding too many times in a hot steamy dishwasher.
