I have one and it's okay at sous vide. Because it can't circulate water, dropping in a cold pack in can cause huge surge in hea going in and that will cause it to overheat beyond what you were expecting for a temperature.
I actually do use my instant pot as the cooking vessel with my Anova Nano when I do want good temp control. I will use the Instant Pot on sous vide mode when it's something that will be fine at higher Temps.
This Instant Pot Max unit is special because it can hit 15PSI like a real pressure cooker unlike the 12 PSI of the standard electric pressure cookers. If you're not going to pressure can, then it's probably not worth buying this unit as you can get the same features for less on the Viva.

only thing I can think of where this would apply is eggs... but, I am not sure there are many other units that are more exact... (even if they claim so) due to where you live, elevation, etc
We have a 2018 model and have had no problems with ours. The only thing with the Sous Vide is your are limited to the size of the pot. This didn't fully replace our Anova, but we use the instant more often. The Anova is used for larger things that won't fit (ribs, big steaks, turkey, etc..).
