Personally I've never try a Global knife but I've heard a lot of great things about them.

Global was Anthony Bourdain's knife of choice. It's typical Western-style Japanese, meaning a much lighter, thinner blade with aggressive geometry than German knives. I like Globals overall but am not a big fan of the handles, which I find a bit too slippery when wet.

They're tremendous. And a little terrifying. The paring knife is so sharp that, no joke, I feel a twinge in a deep old boxcutter scar on my thumb every time I pick it up.

I've had them for more than fifteen years. They're the best knives I've ever used, and a fantastic price here, but most of us only need one chef knife and one paring knife.

How do these compare with say Wusthof? I have a Wusthof chef knife that has held its sharpness for a remarkably long time.. would these be similar?

I have a few chef friends that swear by their Globals. I was choosing between Global and Wusthof when I took the dive into my first higher-end knife. I went with Wusthof because there was a deal. I absolutely love my decision - but this is SO tempting because I've heard such amazing things.

For everyone asking if these are good knives, don't even question it. I bought the G-2 chef's knife because it's overwhelmingly recommended by professionals, and then I bought the GS-5 vegetable knife. Absolutely some of the best knives I've ever used, I really wish I had bought the set since I've already spent more money on those two knives than this set costs.

I have every knife in this set except the serrated one. I've owned them for about 15 years now and they still keep an edge for months after sharpening. They've never been through the dishwasher, and the global logo has long ago worn off, but they still function as if I just took them out of the package.

The triangular shaped handles on the utility knives are fantastic if you have medium to small hands. My small handed wife uses the veggie knife before anything else in the block. I also like it, as it is very natural to do minces with due to the easy rocking motion you can use with the curved blade.

The small paring knife handle is a little too slim for my comfort, much smaller than a similar wusthof or MAC, but that can actually be great for more detailed work. The blade is a little too small for some things like chopping garlic but works great for fruit or mincing herbs.

The G-2 chef's is perfectly balanced and very sharp, but ours lives in a sheath and is our travel knife because I have large hands. I use a MAC chef's knife instead, solely due to handle shape. The G-2 is a great knife, but for me personally the MAC is more comfortable to hold and use.

We also have a small santoku and spearpoint utility knife with the triangular handles and they both handle well and are easy to use. I have never found them to be more slippery than competing handle designs (with the exception of the fibrox handles virctorinox uses, which is like sharkskin and just sticks to my hands).

For comparison's sake, I have used Wusthof, Henckels, Shun, and MAC knives. The globals come sharper than all of them, and the odd handles are easier to use than most of the standards, with the tiny paring knife being the weakest in the set and the smallish handle on the chef's knice the only downsides.

I think I paid $125 for the chef's knife alone in 2006 and thought it was a deal.

Yup love my set and I'm in agreement with you, the chef knife and pairing knife is all that is needed for most people. I use mine on a plastic cutting board and it holds up fine.

How do you sharpen your global knives?

The G-2 8" chef knife is $110 by itself on Amazon. If I didn't already have a full set of kitchen knives, I would jump on this. Fantastic deal. I have five different sized Globals and love them. These are a mono-steel knives and are less chippy and delicate than the laminated steel knives that are all the rage now. I also have Shun, Miyabi and Tojiro, which have laminated blades. They are great knives but I feel that the Globals are just as sharp , just as useful but a bit more durable. I would push down on a Global with the heel of my hand, cutting through the bones, to cut a whole chicken in half but would not do that with my Shuns, Tojiro or Miyabis. I could just use a cleaver but the Globals can handle it.
