You can reduce the water to get better texture. In fact, if you use Zojirushi rice cook, it has the special measure cup of rice and level of water inside the bowl. The rice never lets me down.

I'm white as crap and Instant Pot this and it's good mid grade rice. You can rinse or not rinse to adjust how sticky you want it and same with water. Definitely not paying what some will for rice, though I will pay $1.50/lb for good extra long basmati.

This is totally different from jasmine rice both in terms of texture and sweetness, so can't really compare.

I'm well aware of the differences. What I am saying is that you can buy high quality rices for about this price and that Nishiki isn't poor quality.
