Would either of these be a noticeable upgrade over a WD blue SN550?

In benchmarks, yes. In the real world, probably not.

Isn't it better to have the factory installed heatsink at this price point?

Also (FYI), I don't believe the SN550 is not compatible with PS5.

If you are just doing "reads" (ie game loads), you won't notice. However, when I'm doing large file writes to NVMEs, the there is very noticeable slowdown on my WD Blue SN550 compared to writes on my SN850. Both are blazing compared to writes to SSD.

TL;DR lots of large/small writes gen4 is noticeable. A lot reads? Not so much.

I personally intend on using the heatsinks on the mobo, but if you can get the heatsink version for the same price I don't see any reason not to.

A few seconds faster on some game loading. If a game has tons of teleporting to new area mechanic, it kinda helps. I just upgraded to Sn850 last week.

Yes, I have all 3. The SN850 is noticeably faster. It isn't mind blowing, but you will notice a difference. SN750 was about 7-8 seconds to boot, where the SN850 was about 2-3 seconds.

Windows responsiveness was a bit better too.

if your motherboard supports gen4 SSDs yes, otherwise these will be marginally faster in real world apps

It's for a desktop I bought a year ago at Microcenter, Powerspec G707. Has an ASRock X570 motherboard, which AFAIK supports gen 4 M2 SSDs.
