T7 gets real world speeds over 900 MB/s, T5 speeds are ~ 450 MB/s.
It is worth noting that the T7 will heat throttle if you move large files around and drop to 170 MB/s (or lower) while the T5 will chug along at 450-500 MB/s without overheating.
Depending on your use case it's easier to get around the throttling. A small battery powered fan blowing on it during big transfers is enough to prevent it from throttling, as is putting in on an aluminum heat sink or even inverting a can of dust off and blasting it with refrigerant for a second.
I used these for copying over 1-2 TB at a time (essentially filling the drives all at once) and around 300 GB w/ checksums it'd start to throttle, so I just starting having a little rechargeable fan blow on it on low, problem solved.

Well, it's USB C 3.2 Gen2, so it's still only 10Gbps like the T5 (which is USB 3.1 `Gen2'; I really hate what a mess USB has become!)
The SSD transfer speeds are supposed to be roughly double on the T7 vs the T5 though (~1000MBps vs 500MBps), so it would definitely be worth the $10 to upgrade.

For the 2TB, I have seen these cheaper. The 1TB matches the all time low on terms of deals. I was hoping the 2TB t5 would come out cheaper, but this is regular sale price.
