The i5 12600 is a beast. Probably best bang for out right now. I have an i7 12700/3080 and my friend's rig is 12600/3080 and mine doesn't outperform his by all that much maybe 15%. On the other hand I also have a 11700/3080 and the 12700 beats it by around 20-25%.
You realise that you're not only getting a far inferior processor but a dead platform as well.

I got a prebuilt with a 3070 to tide me over but am either going to build my own or upgrade to a prebuilt with a 4080 once they become available, and I am trying to learn as much as possible between now and then.

I am assuming he means the 11th gen is the end of Intel's 14nm architecture. There is no upgrade path without doing a whole new build. The i9-11900k is basically just an overclocked 11700k and became memeworthy for it's heat output.
If you get a 12th gen platform you could upgrade to a 13th gen in the future and get more life out of the build. I plan to enjoy the PC for a few years and then upgrade to a hypothetical i9-13900k once they become cheap in ~4 years.

I would go with an i5 12600 and the 3080.
The i5 12600K is a better CPU than the i7-1170.
