Agreed, a must-have accessory after the ash basket. Perfect sear on steaks, smash burgers, and cooks pretty much anything on a nice flat surface. I prefer this to cast iron for the ease of cleaning and more even sears.

You don't really need the cast iron cooking grate. Basically no difference from the stainless steel one once the oil/high heat burns down the stainless steel ones. I don't even bother switching them because it makes no difference.

I bought cast iron grates...haven't even used them once. However, the soapstone I have used a few times. I also used my stainless grate, the one for veggies and fish a few times also. If I had to go back, I'd just not get the cast iron ones.

Depends on how you're cooking it. I usually just do a reverse sear and finish on the soapstone.
