By the time your outdoor temp hits -5, their 24K BTU loses half its capacity and can only generate 12K BTU of heat.
Exactly, the cold climate units have a much more forgiving compressor when its cold outside.. We ran 5 splits down to -15 last winter in upstate NY with respectable results. They need to go through a de-icing phase about 2 times an hour, that's a little noisy. Also I would avoid the house-mounted racks and go with one that sits on the ground (with legs to keep it out of the snow). They can make some odd low range humming when they are running hard.

We have a 14ft ceiling shop about 900sqft. Would it make more sense to get two of the 120v units and spread out vs one 220v unit in the center? Roughly same cost.

I think the manufacturer is mean for one time installation. Once the line and unit is properly sealed it means permanent, like AC in a car.
Relocation the unit could cause some leaks but sorry I am not sure how will it affects the performance.

You'll have to look up how to recover the refridgerant back into the outdoor unit. It's not as simple and just disconnecting it and reconnecting it, but moving it should be doable.

Not true, same amount of work for both. Higher voltage needs lower gauge wire, which means its cheaper to run and more efficient probably. Main thing is you need two slots in your breaker box.

I have a dedicated 20amp plug for ac in my house. I can do a bit of demo to expose the wire and connect it outside, but I'm curious - anyone wire one of these to a plug from the inside instead of hard wiring?
