you also will not get a sear on smoker that does not have a searing function. your best bet is to bring it inside and sear it on the stove after you're done smoking or get one of the pitboss pellet grills that have the slidable searing function that exposes it directly to the open fire pot which works fantastically.

You can add a smoke tube to get more smoke to the meat. I used one with my electric and now my pellet grill.
If you're not getting good smoke flavor, it might be the smoker, but could also be poor quality pellets, you're not smoking long enough, and/or your meat isn't moist enough to absorb the smoke. Try a dif temp, dif pellets, and spraying it every 15-30 mins.
I also have/had a MES and a large pitboss pro. First question would be if you have added a pellet tube, tray, or mailbox mod to your MES? Would give an idea of what you are used to because I don't think a stock MES does great and had done all of those to mine. Then I would just say add a smoke tube to the pitboss and see how it does. Since they use pellet for heat and smoke if they are running stable then not as much smoke.

I've seen someone that owned this and smells and works just like a normal pellet smoker. Just smaller format. Worth it if i needed it for RV or camping.

I thought about getting one of these and I had heard that the fan for this unit is underpowered
I've never spritzed and haven't found a need to. Lots of contrasting opinions if it does anything. Seems like a reason why I have to open the lid and the more I do that would create more issues (temp drop, loss of smoke, extend time, etc.)
No! Not food safe and could be full of who knows what.
Use lumberjack, bear mountain, or knotty wood branded pellets. They're pretty much the only three brands that should be used. I used the pit boss competition blend and they're not too bad but the rest of their pellets are pure trash. Try one of those brands if you're not already. And typically when smoking food you'll be in the range of 200-250 degrees F. Also like others said for additional smoke add a smoke tube to promote additional pellet burning.
