"Heating pellets are made from a combination of softwoods, charcoal and other fillers that can give your food a chemical taste. Even high-quality heating pellets can include leaves and bark, which taste bad and can lead to health risks if ingested. Use lumberjack, bear mountain, or knotty wood branded pellets. They're pretty much the only three brands that should be used. I used the pit boss competition blend and they're not too bad but the rest of their pellets are pure trash. Try one of those brands if you're not already. And typically when smoking food you'll be in the range of 200-250 degrees F. Also like others said for additional smoke add a smoke tube to promote additional pellet burning.

you also will not get a sear on smoker that does not have a searing function. your best bet is to bring it inside and sear it on the stove after you're done smoking or get one of the pitboss pellet grills that have the slidable searing function that exposes it directly to the open fire pot which works fantastically.

FYI for a good sear. I smoke to under temp and sear on coals or cast iron. Same damn good

yes this would be right up your alley. a friend has a big pit boss pro and he uses it religiously instead of his built in Blaze propane grill. the pit boss grills also have a plate that can be opened for direct heat too, and most others do not.

No. Heater pellets are NOT food grade. You could be subjecting yourself to contaminates that might be in them. Stick to pellets made for grilling.

Have you tried using a charcoal chimney, that's been the best thing I ever bought for my bbq. I use my bbq a lot when I don't want to defrost certain meats or I need to make a lot at a time. Like last night I made 4 NY strip steaks, 2 chicken breasts, and green beans. I just ended up grilling everything and it's so much simpler to cook. One of these days I'm going to get a large griddle that hooks up to the natural gas line.

Back to what I was saying. A charcoal chimney only takes 10 minutes or so to get the charcoal ready and then another two minutes to get the grate hot enough to clean it. Plus clean up is simple, just empty out the ashes. In a gas grill you really have to clean it out once and a while. It did take longer then gas but if you start ahead of time it's better then gas. You just have to shift your start time to include getting the charcoal ready. I can make two steaks and mashed potatoes and a veggie in less then 30 minutes when cooking on the stove. Last night's dinner only took me just over 50 minutes including getting the charcoal ready.

another option could be is if you're looking to just cook burgers and hot dogs just use the stove and get a large cast iron pan. or a griddle. I've made burgers on the bbq and prefer cooking them on a griddle. I make smashburgers and everyone prefers that compared to BBQd burgers. you can add grilled onions to the griddle and add fried mustard to the griddle and smash the burgers into the fried mustard. yes it doesn't have that BBQ flavor but this method tastes so much better. problem is the clean up of all the grease where as a BBQ only has ashes to clean up. which is why I use the bbq a lot to cook because clean up is so much easier.

edit: I just realized I don't think this would work for you if you're worried about time. this will take a while to get up to temp to make burgers and brats possibly even longer then a bbq using a charcoal chimney. since you already have a charcoal bbq just use that or get a smaller one and use less charcoal. or try and make smash burgers.

I am buying this one just from a charcoal waste perspective... Cooking for two adults and by the time the coals are perfect, 90% waste... This has the sear grates to finish it out nice and easy

Are you using Kingsford charcoal or the like, or lump charcoal? I know when I use a full chimney of Kingsford it only lasts one session. But if I use a full chimney of lump charcoal I can get two uses out of it. If not I just add a new 3/4 chimney full and add the last batch to the top. Then just keep doing that if needed. a 40lb bag lasts quite a while. If you're looking from a waste perspective then look into a natural gas grill hook up. That would be your most minimal waste. or an electric grill.

Similar to what others have mentioned, you're essentially going to want to use this as the oven in a reverse sear method. Get the meat to slightly lower than your desired temp first while infusing delicious smoke. Then put that bad boy on a searing hot grill or preheated pan on a hot surface to get that sweet crusty maillard* reaction on the outside. (*Not to be confused with the duck)
