I guess in person his speach is of a normal cadence but in his videos all the dialog is done off camera and he achieves his famous word rhythm while reading his script. I subscribe and thumbs up all his vids.

It's just a very spicy chili powder. Cayenne peppers are several times spicier than jalapenos. I would assume you don't want that as the only seasoning on your meats.
