how's the 550W psu on this? a bit worried with the 6700xt since AMD recommends a 650W

6700xt is about 230w, the 5600x about 65w, which leaves 550 - 230 - 65 = 255w remaining for all other components. it should be ok, assuming the components of the psu aren't garbage.

Right.

mobo, RAM & SSD are going to use ballpark 85W so this build would have probably around 150W+ extra room with a 550W PSU

The recommendations of 650W for a GPU like this are just a conservative blanket number from the card makers to make sure people don't under power systems. It covers systems with high end CPUs, tons of RAM, etc, more a worst case scenario of power usage at the system level just to ensure you have enough. Actual budgets differ based on the actual parts used. If AMD recommened say 500W that would work for this build but then someone with an i9 K processor and 32GB of memory and high powerd boards and 2 x HDD drives etc would not be ok.

makes sense. only other thing I'm worried about is airflow/heat on this thing, since the front isn't mesh

One thing you can do is move the front fans to the top as exhaust, creating negative pressure, similar to the nzxt 510.

"Three 120mm intake fans are located at the front of the case behind a dust filter"

"To stress test desktops, we ran Metro Exodus on the RTX preset 15 times in a row, which simulates roughly half an hour of gaming. The average frame rate across each of those tests was 67.16 frames per second and was stable across the entire test.

During the Metro Exodus gauntlet, we found that the CPU ran at an average of 4.2 GHz and measured 71.2 degrees Celsius. The GPU ran at 2,185 MHz and ran at 66.4 degrees Celsius."

I use this same case, and airflow is fantastic. I have the 3 included fans on the rear (1) and top (2) with a 360mm radiator up front. My build has an Intel 11700 (absolute heater) and RTX 3080, and everything stays very reasonable at full load.

I currently run a 6700xt with a 12600k with a 550w PSU.

Zero issues.

2 SSD + 2 HDD connected as well

Components would be (at least) $560 with cheaper components doing a quick check on PCPartPicker. Adding windows would increase that by $5-120 depending on how open to buying cheap keys people are. Plus it comes assembled which some prefer. I'd say it's a pretty solid deal overall as long as you aren't too picky about branding of parts and don't want to wait/"need" it now.
