Got the blue cash preferred which offers 6% cash back for me since I shop at Ralph's and other supermarkets like the Hispanic ones in SoCal.
For Walmart I use their 5% cash back card. For gas if I am using less then $500 per month I will use Citi's Custom Cash for 5% back. It works out pretty awesome.
I hate how Costco only gives you the cash back once a year so I will be applying for the Sams MasterCard which gives 5% cash back at gas stations and I can get it every month.
I get 3% back with the savor card by capital one. And I don't have to deal with mental American Express that denies me based on filing bankruptcy all the way back in 2008. Talking about hard feelings geesh. They are the only company that hasn't forgiven and moved on after 15 years.

No, you can track it yourself, or create a filter to track it for you, but the date you need to track by is your anniversary date which the filter will not know. I use a Google sheet
Still at the bottom for me. With a few different cards it isn't hard to be getting 5% back on gas and grocery purchases year round. Online retail at 3% is decent but there are often 5% paypal quarters for discover and chase or 3% with paypal + paypal mastercard.

Citi Custom Cash on up to $500 worth a month. Although not currently even using it because P2 got the Chase Freedom Flex signup offer for 5% on groceries for a year.
