The S6, S7 and S8 will all have the same processor. The differences will be battery size, screen size and a couple neat but not particularly useful sensors (blood oxygen, can't recall the others).
I cant install an update on my s3 without having to delete every app and downloaded song/podcast. For that reason alone it's worth upgrading.
