CDKeys[cdkeys.com] has 3-Month Xbox Game Pass Ultimate Membership (Digital Delivery) on sale for $24.59.
About Game Pass Ultimate Membership:
Xbox Game Pass Ultimate Membership includes Xbox Live Gold and Xbox Game Pass with over 100 high-quality games to play with friends on console, PC, phones, and tablets, plus an EA Play membership, all for one low price.
This matches the Black Friday price. But recent deals which got us 50 days for $5.50 makes this price feel a bit high. If you don't need it now I feel you may get a cheaper price by waiting.
Can this be stacked? Currently
Paying the $15/month for my sons account. Want to cancel that and just buy a bunch of these. Does that make sense? Not sure of the conversion option from gold as described above

Yes, you can stack up to 3 years worth of service. Although if you are paying month to month, you should simply let your subscription expire. Then you can convert gold to gamepass ultimate at a 1:1 ratio.
IE If you Pay $60 for a year of gold, then pay $15 to upgrade to gamepass ultimate. You get a year of gamepass ultimate for $75. Although I am sure there are much better deals for gold than $60 a year. And you can stack up to 3 years of gold before converting to ultimate.
But you have to let your gamepass subscription expire first. If you have an active gamepass subscription the gold won't convert to ultimate at a 1:1 ratio. And the conversion can get kinda weird, like 3 month gold codes get you 50 days of gamepass ultimate and 1 year codes only get you like 4 months I believe.
Your best bet is to just cancel your subscription, wait for it to expire. Buy a bunch of xbox live gold codes (up to 3 years worth), redeem them all. Then pay the $15 to upgrade your gold subscription to gamepass ultimate.

I'd just like to add that you should turn off auto-billing before you redeem anything. Sometimes MS offers a free month to turn it on when you redeem a 3 month card. If you are redeeming multiple cards, turn it off before you redeem each one and let MS turn it back on and give you a free month. You can get to your 3 years with 9 cards giving 4 months each instead of 12 giving 3 months.

How can I do this
Simply buy Xbox gold cards and redeem like anything else. It will convert to game pass ultimate when you redeem...
