Victorinox is a severely under-appreciated brand. My whole set is made by them and I love everything about the knives. Had to sharpen my most used knife twice in 2 years and it is back to the same sharpness as new

It's good for trimming fat off of a clod, but I wouldn't use it to actually cut through the meat. That's a job for a cleaver or good chef's knife.

I hone it every time I use it, but I only sharpen it twice a year. As long as you wash and dry it immediately after use you should be fine for months.

This knife is fine for deboning chicken and anything of normal size. The no-slip grip works perfect for bloody hands. Use for a few years and buy a new one.

This has been my go to for butchering deer meat for multiple seasons. When I debone and process the hind quarter I'd say I use this knife pretty much exclusively. Holds a good edge but is also easy to sharpen up.

I have the Pro version of this with the thicker handle, and it works great for chicken.

This one has the skinny handle which I have on a couple of my Victorinox knives, and the Pro version is much safer as the grip fills the hand and is much less slick than this cheaper version. Not important on a paring knife, but when you are cutting through skin, fat and bone, the larger grip is well worth the $$$

VERY much agree on this. I own $100 Henkles and multiple other brands, forged and stamped. I have 3 commercial grade Victorinox (fibrox handles like the OP) I use frequently. They work great. Just hone them before every use and it will be years before they need sharpening if you dont bang them around - and if you use a an end-grain cutting board or non-damaging plastic or Epicurean style
