not a whole lot to choose from (i haven't played quite a few of the listed games) but i can vouch for tricky towers, it's a 4-pllayer tetris-esque game but my favorite however not as "party" as you might describe, is battleblock theater. it's extremely fun to solve puzzles and do some platforming with another player, but that mode is only two people at a time, and the pairs take turns trying to beat each other, but it's so ridiculous and charming to play AND watch. i believe there's also some other silly modes but i haven't played it in quite some time.
Any recommendations for games to play with toddlers that are just starting using a joystick? My LO loves construction so I'll definitely get Construction simulator for when he's older.

BIG recommendation for Boomerang Fu. Such a fun, easy to pick up couch co-op. Anyone can play it and my kids (both under 8yo) love it
