If I had to do it over though I would have just kept the stock tires, stock wheels and got the QR Manitou fork instead of boost fork thru axle to save weight and not gotten the e13 35 bar (stiffer and heavier than stock, only got it cuz my friend wanted to get rid of it for cheap) and corresponding 35 mm 70 mm stem. That would have saved about $420, my bike can handle black trails with those upgrades but it's slower and heavier than stock and I mainly use it for blue trails cuz my full suspension is a lot better on black trails still.

You clearly have very little riding experience, or it's been a while. Go out and ride, do some emergency stops. You don't need both feet.. Once you've stopped, you can balance on one foot just fine. Remember that your bike forms the other leg of the triangle.
You also skipped over my parenthesis where I state "doesn't take long" to master balancing a bike. A child can do it in a couple of hours, an adult will take let's say 2 weeks, who knows. I've never met an adult that couldn't ride a bike. I know they exist, but most adults rode when they were children. They just need a few minutes to refresh themselves, but after an hour they're solid. This I've seen first hand with my own parents in their late 50's. During covid, they went out and bought bikes like everyone else. It only took them a few minutes to remaster after several decades of no riding.
Bike geeks want every specification, including bottom bracket height, chainstay length, reach. They literally measure everything and publish it. Standover is a number to look at, what we're saying is that it's not the priority. It's like looking at 2 cars you're interested in, but only looking at horsepower. If 1 car has 10% less power, but is more comfortable and quieter are you going to skip it because horsepower is the most important thing to you? No of course not, you take it into consideration, but I argue comfort, handling and quietness matter more.
All of this is moot because modern mountain geometry is SLACK SLACK SLACK. They raise the head tube up and keep the seat tube low. If you spend enough money to buy a hydroformed aluminum frame, the top tube can have swooping j hook angles. Combined with a dropper seat post, standover is a non-issue.

We all know 4 legs is more stable. 4 "legs" on a bike would necessitate stand over ability.
As far as mastering balance...
First, some people can practice something forever and never be a master. And being a master of anything doesn't mean your perfect in every situation. Why do high-wire balance "masters" have a net under them? That one emergency situation where you would be helped by being able to put both feet on the ground after stopping requires being able to stand over the bike frame.
As far as your "excuse" as to why the respected bike manufacturers include stand over height in their specs is, well...just that... a "convenient" excuse. Lol. First you say REI making suggestions about stand over height is a meaningless because they're just a big box retailer without a clue about bicycles, and then you say the respected bike manufacturers include it solely because it's just another measurement. You are ON OF THOSE PEOPLE who are great at making up EXCUSES that do nothing but twist facts to support your argument. 😂😂😂
If stand over height DID NOT MATTER to anyone, they would not include it. I could go over a bike and find a dozen measurements they didn't include, so yea...stand over height matters.
Lastly, comparing stand over height to a small difference in a car's horsepower is a silly comparison. We're taking about how the bike fits you and a safety issue.
A somewhat better, but far from perfect analogy would be a large truck or jeep that's so high that you are sometimes unstable getting in and out of it safely.
But after all this...I take it all back and will now agree with you that not only is standing over a bike frame unnecessary, but it's also DANGEROUS! Why? I just happened to see that clip again of Biden attempting to stop and "stand over" his bike frame, but his shoe was caught in the pedal and he went down like a box of rocks 😂😂😂😂
I just thank God he did not get severely injured being as old as he is because the next-in-line is a total train wreck!!! 💩💩💩

Again, you put words in my mouth. Again, I never said REI was meaningless. I said they were better than walmart, but because they're a big box retailer they're more limited in bike sizes and therefore measure more generically than a bike shop. Walmart is the worst, they measure bikes by wheel size, even for adults.
There was no reason for Biden to use toe straps for the type of riding he was doing. As you can see, he had a good 2 seconds after the bike was stopped to do something before it started to fall over. But his feet were caught. If he wanted excercise at 79 years old, he should have ridden an adult tricycle.

It's still a lot cheaper than a comparable Trek Roscoe with a better geometry than the Roscoe 8 at the time (the 2022 Roscoe has a new geometry).I had a Roscoe friend talk trash when I was installing the fork, he shut up when I told him the geometry and how much I paid cuz his Roscoe (2020) had ancient geometry and he paid more than $2k. The frame geometry of the Axum is near identical to the Trek Stache.
