Anyone know if this would be acceptable for a budget gaming build that uses an i3 10100, and a 1660ti? I'm looking at the MSIB560M Pro-E mATX, but it went from $84 to $130 in the past week.

The build is for my 8 year old on Christmas, so any advice on whether I should wait to purchase stuff would be appreciated as well.

This particular B560M motherboard is functionally identical to the very well reviewed Gigabyte B560M Aorus Pro (non-AX by Hardware Unboxed.) It is an excellent choice for a budget build. HOWEVER, the primary M.2 slot on the front of the motherboard will not function with a 10th gen Intel processor. You need a i3-11100 to get PCIE gen4 functionality and front M.2 availability. There is, however, an M.2 slot on the back of the motherboard that will work with the i3-10100.

I mean youre not wrong, this is probably getting cleared out since Intel just announced the 13th gen making this two gens behind. Still you can get a lot out of a 11th gen i7 or i9.
