Start with Elden Ring. It's the easiest and most accessible of the franchise. It was the first one I beat and now I'm moving through Dark Souls 3 pretty smoothly.
Planning on going back to Demon's Souls next.

I'm interested in Demon's Soul but I'm just an average (perhaps below average) gamer and with how you indicate how difficult this game is, I may not get far into this game. Maybe I'll wait for further discounts before taking the plunge on this one.
Demon souls isn't super hard as there are cheeses for many of the tough encounters especially as a royalty build. You can also level grind fairly early too. It is available on ps plus extra. Was one of my favorite exclusives on ps5.

I failed and quit at DS1 twice and Demon's Souls on PS3 once.
Years later I committed to git gud and it paid off in spades.
You CAN beat them, if you have patience and embraced failure as a method of progression.
I've died on some bosses probably 100 times.
I suck but enjoy the hell out of the process.

People often say things like this, and while true I don't think it's enough to sway most people who think of themselves as "bad" or more casual gamers. Even to cheese bosses it requires a lot more than button mashing, and just getting to bosses requires a lot of nearly mistake-free gameplay that can be very stressful. If you aren't good it requires a lot of backtracking.
I know the focus on skill is what people love about these games. I'm well into Elden Ring right now and the thing that has got me to stick with it vs other FromSoftware games is the fact that when I get stuck or die I can go grind elsewhere instead of just being...stuck.
I'm not sure where I'm going with this. I guess it's just to say that no matter how often people try to tell me these games "aren't that hard"...anything where I can get completely wrecked by a low level enemy if I'm not paying absolute attention is still pretty hard for your average "not that good" gamer and threatens to not be all that enjoyable.
Again, saying as someone who is really liking Elden Ring and has played bits of most of their previous games.

Took me years to finish Bloodborne ... stuck most of those years on Rom the Vacuous Spider Once I passed it (her?), I enjoyed the game so much ! That's my problem with their games, they always have some kind of bullshit boss at some point or another (looking at you Maneaters from Demon Souls!). After finishing Bloorborne, I started it again (which I never do with a game) so I can enjoy the first levels design in a more relaxed way Then I played and finished Demon Souls (PS3) ...
I am wondering if this is worth it if I played several playthroughs of DS on the ps3 years ago.. I did like it alot but I never got into DarkSouls..
This version is mind-blowingly better in my opinion. Graphics, FPS, inventory issues fixed, etc. etc. In some ways it feels like a new game. If you loved it on PS3 you will love it on PS5
I still go back to Bloodborne every now and then. It's a top 5 game for me, and the only one of the FromSoft games that I've beaten.
I have Elden Ring and Demon's Souls for my PS5, but I've yet to get over the initial hump that always slows me down on these types of games. Same thing happened with Bloodborne, I started it, hit a wall, and took a 2 year break. I picked it back up for some reason and something clicked and that's when it became a personal favorite.

As I am in the endgame right now, I can say that it has been an enjoyable ride.
I think that the quantity / quality of bosses is the DS series was a bit more enjoyable.
They are quite varied in BB however and I enjoy that.
The QOL improvements that BB brought along with the way you get your healing items was well handled too.
I wish there were more BBs made.

As Rom starts out just sitting there, I was initially going to let him live much like I did with the Ancient Dragon in DS2.
I read though that he is a must beat boss, so away I started to hack.
I think for me too he has been my most difficult boss.
The first phase is cake of course.
Things get really hairy in the second phase however.
I settled on aggressive mode to take him down.
I was getting wrecked trying to clear his underlings in the second phase and so just decided to go berserk and ignore the little bastards.
Worked and I left the battlefield with a sliver of health.
