Other SDers, please chime in. My experience is somewhat dated.

Problem with Costco is that you MUST buy the variety pack.
This is true. But I like variety, TBH the 11 Nerissimo is less subtle than the others. Always can pawn off the ones I don't like on guests who are happy just to get an espresso.
Hit me with your best coffee. Capsule or not. I wanna try. If it's good enough I'm okay buying the $700 espresso machine for it.
If you want the best tasting coffee, non-capsule is definitely the way to go. Hand tamped grinds are going to be far superior to even a super automatic. The age of your beans from roasting will also be very important. They start to age immediately and the first week after roasting is probably the best time to consume. My set up is a Rancilio Silvia machine. You will need a good grinder, so I paired the Rancilio rocky grinder with it but there are others. Then order some green beans (I use sweet Maria's just because they have great descriptions of all the different beans and the flavor profiles). there are multiple methods of roasting your own beans, but the simplest is probably using a hot air popcorn popper, but just make sure that the vent slits are on the sides of the chamber not the bottom for fire hazard purposes. With that said, you won't get a better tasting coffee but it's a little more labor intense. The setup I mentioned is probably one of the more reasonably priced. My wife likes to use our super automatic Jura, which is definitely much easier and produces a great cup of coffee but it's not the same. The next in line would be these nespresso machines IMHO.

If you want to try a selection of good coffee try out Fellow Drops SMS list. But the first two things you need to control are grind and water. If you water sucks for brewing, your coffee will suck. There are mineral additives you can buy for cheap to add to a gallon. Second, with brew grinding you'll get a good enough grind from a $200+ hand grinder. Below that is iffy.
