Please consider only buying the stainless steel model. The black powder-coated models get really grundgy fast... and they don't clean-up well.
I have the SS model and my daughter/son-in-law bought the black model. Mine is 6 years old and theirs is 2 years old. We both try to keep them in top shape. Bottom line: Mine, even tho 4 years older, is in MUCH better shape than their black model.
Blackstone doesn't use the best stainless steel (like Weber grills) by a long shot meaning you have to keep it clean. But the powder-coated black ones become ugly really fast... even with regular cleanings.
I clean mine with SOS (the SS parts, not the cooking surface!) and it took off all the lettering. I don't care - I don't need the lettering... I need CLEAN!
I'm happy with my 36" Blackstone - it's well seasoned, and it's easy to keep clean. Just do some hibachi and Philly cheese steaks and enjoy!
I strongly suggest you buy the 36" - the extra size and extra burners will allow you to push stuff aside to hold them while other things are cooking. That is essential when working with a flat top... and one of the reasons it was invented.

Everything I am reading suggests the black stones are all cold rolled steel (aka cast iron). There is no mention of any model being powder coated. I'm not even sure that would be safe to cook on. Nor do I see anything about them being pure stainless steel.
