I just ordered the XR.
When does the BB deal end?
I already have tmobile line, will they consider it as existing line? Or i have to get a new metro line?
You cannot port a number that was in Metro/TMobile in the last 180 days.
1. Do I just order online on BestBuy AND enter the trade-in model for local pick-up? When doing the pick-up, they will do the adjustment? (looks like they charge tax on the full price on the pixel?)
2. Can I just order on Bestbuy now for local pickup and once I receive the iPhone XR from straighttalk, I can go and to the BB store for PIxel 7 pickup and iPhone exchange?

Anyone know if there is a diffrence from selecting your number now or later on ST? Do you get a card with a number you can sell or use on a different phone?

Find my iPhone / iCloud should be reset. If the phone is iCloud user account locked, no retailer or even carrier will take it. That's one of the requirements when you trade in.
