Sharing your thoughts I've managed to carefully push the iPhone box out of the protective plastic, so could probably put it back. The plastic has the ST sim card attached, so it might be a good idea not to show it to avoid possible discussion about ST/Verizon.
I gave the box with the iPhone to Best Buy employee, and he removed the plastic seal from the screen, checked the IMEI and proceeded with the trade-in, but he didn't care if it's a Verizon/T-mobile or whatever.
However my relatives got to the store where the guy didn't know how to do this trade-in, so they ended up with the open box, but the plastic seal is still on the phone's screen.
(1) go to https://www.google.com/android/beta.
(2) click the button to enroll your phone.
(3) when you get a notification that there's an update on your phone, install it. I think it took less than a minute for me to get the notification.
(4) there's no step 4, but if you want to unenroll from the beta program you will have to wipe your phone UNLESS you do it after the release version of the beta software you installed is released. This is explained in the link above.

On the other hand, the Best Buy pixel phone would work fine with any carrier as long as it's not Straight Talk. Looks like I'm not the only one:
