They are very good. Stable, durable, you can haul then in a car and they inflate in just a few minutes. I own 3.
I have been kicking myself for not picking up the Explorer when it was around $50 before the pandemic. Jumped on this one.
Intex Challenger k2 is also the same price at Walmart.

These are fine for $70. High quality in an inflatable will cost a lot. See Aire kayaks.

Possible yes. Comfortably, likely not.
I've owned 4 intex inflatable kayaks over 6 years. I let my buddy who is 6'3" ride this k2 solo and he's comfortable. Im 5'10" my s.o. is 5'3" and we took this yak out along with our 2 year old on board & it was tight. Id say this boat is more for 2 smaller people.

Would this one be better for taller people or the sierra?

Tempted to get this to use in my ponds. With it being winter now and they are frozen and snow is on the ground I am not super motivated to buy something like this right now.

They fit me and another person really well but I'm only 6'. The seats are adjustable, so you could possible put one all the way back and the other all the way forward but you may still find it a bit snug with another person. On the bonus side, they are very comfortable compared to a regular canoe.

All of the "K2" kayaks are identical except for the coloring — not sure why intex does this…

We bought this about a year ago at $100 and took it out twice, now it's collecting dust. Prior to that, we had a 4-person inflatable rowboat with 600# capacity that got a lot of usage (fast, stable, and just as quick to set up and break down, and about the same size deflated). These are a lot of work if you want them to track straight, especially with the skeg removed for times you need a shallower draft like in creeks and rivers. (Link to recent/dead deal for the kind of boat I'm referring to: https://slickdeals.net/share/iphone_app/fp/746197)

I just haven't found a really compelling use case for the kayak yet, but I'd still consider getting 2 at this price, or 3 and return one…always inflate them all and make sure they aren't leaking before taking them out!

It's definitely a lot of gear for $70, and the 5-piece paddles are surprisingly good.

I want to buy 2 and connect them together with a solar roof and cruise around with electric motors. You think it will work?

If you get an inflatable check out the cordless inflators that most tool companies make. I have a kobalt one that was $35 and it's a game changer for inflatables
