As for the Kraft cheese, it's more of a convenience than anything. I tried authentic Parmesan cheese off the block years ago. It was good, but I found it too rich to be used all the time. It had kind of a funky taste to it. This is good enough to be used as occasional seasoning. If I want something slightly better, I'll get Sargento or something. It's not like I'm eating it on a cracker.
The additive doesn't accumulate in the body and readily breaks down into carbon dioxide and water in the body,

(1) Cheese Parmesan, which contains (2) Milk (Part Skim), (3) Cheese Culture, (4) Salt, (5) Enzymes, (6) Cellulose Powder, Added To Prevent Caking, (7) Potassium Sorbate, To Protect Flavor
I object to the cellulose powder because it's not necessary. It's a cheap filler. And I'm not a fan of preservatives. Think whatever you want about Potassium Sorbate but for those people thinking this is a pure parmesan product, well - it isn't.
