So assuming you buy Target gift card with current 10% off promo and then using that would give you this for about $180 ish...also Chase has additional 5% cash back with PayPal this quarter as well as Discover has 5% back with Apple pay or digital wallet so if you buy the Target gift card with one of this option you would get this potentially $170 ish ...

The pro2s are my first airpods as an android person and I'm really enjoying them. They also haven't been updated since they haven't connected to the mothership via an iphone.

The biggest difference I found was with their active noise cancellation. It went from good to "I can't hear my wife while wearing them anymore". I like that I can find the case more easily, it has built in air tag functionality. I'm not an audiophile, and can't tell too much difference between gen 1 and gen 2 for audio quality. No crackling issues yet for me. I'm taking a flight next week and I'm looking forward to trying both the gen 1 and gen 2s and see the actual difference in ANC.

I see AppleCare for headphones on the Costco site but there's nothing that let's me buy it (add it to the cart). Any ideas? I've got the Airpods in the cart already

Remove item and try to add back to cart and there should be a pop up that says view cart or continue shopping when you press add to cart. It should let you add the applecare.
If that doesn't work, remove item form cart and clear your cache/data if you are on CPU. If you in app, remove item and closed out of app completely and try to add it again. Also, you can purchase the AppleCare from apple within 30 days from date of purchase.
