There's some confusion in this thread. Allow me to provide some clarity here:
The numeric convention (e.g. 7.1.4) refers to the number of output channels, NOT the number of speakers as others have said, with the first digit representing channels in the horizontal plane, the second the number of LFE channels, and the third the number of height channels. An output channel is a discrete stream of audio being output from the decoder (such as a Dolby Atmos or DTS:X decoder). Ideally, each output channel would be reproduced/amplified by a dedicated speaker in a room - as we see on the walls in a movie theater - but sound bars are about saving space. So, a bunch of transducers are packed inside a single enclosure (the sound bar) and a bunch of output channels are being projected from a 42"-wide box under the TV. There are obviously audio post-processing technologies these sound bar manufacturers use to deliver a more spacious sound, but - assuming the manufacturer isn't fibbing - there are transducers inside the sound bar that are tasked with reproducing each channel of audio that the decoder is outputting.
This sound bar - NOT including the sub or surround speakers - is a 3.0.2 sound bar. That's Left channel, Center channel, Right channel, Left-Height channel, and Right-Height channel. AKA: L/C/R/Lh/Rh. Add the sub and surrounds, and you've got 5.1.2. L/C/R/Ls/Rs/Lh/Rh/LFE.
Yes, I admit that this all gets murky given the liberties manufacturers take with this naming convention. 11.1.6 in a sound bar is likely BS. But if the Atmos decoder is literally outputting 18 channels of audio, well…then it's technically accurate. But if they're using 12 transducers to amplify 18 channels of audio, then you can be sure that there's some audio post-processing being used to virtualize the sound.

$250 for a 5.1 is either just speakers and no amp or a really cheap setup that is bulky and lackluster (ie. you can't compare a Walmart $250 Samsung 5.1 setup to this.)
The cheapest decent 5.1 setup is still around $600. ($300 receiver and $300 for speakers)
These expensive setups are for those who want great sound in a compact space with ease of connection.

How is this setup compare to a Sonos Arc, sub, and a pair of Play 1 for surrounds? They're roughly the same price when on sale (Arc $799 + Sub $599 + pair of Play 1 $200 = $1598)
I had almost this exact Bose setup and it was buggy, sounded dead. For roughly the same price as the Sonos system that I am using now. Sonos is above my expectations and such a solid experience and fair price for what it is.

Samsung, LG, Vizio and many others are notorious for over advertising with an asterisk to lure buyers. Similar to 1000w of power in their advertising. But you tried to correct something that was correct to begin with. This Bose setup is a 3.1 system.

While the soundbar itself is 3.1 (prob more like 3.0) since it has 3 channels in it, adding a sub and 2 surrounds makes it 5.1 since there's 5 channels
..unless I missed the sarcasm of getting stereo from something a couple feet wide lol

Awesome sound, loved the base, much better than the cheaper prod from samsung/lg. pretty buggy for samsung tv mostly due to connectivity but manageable.

Unfortunately people always try to compare soundbars vs a true surround setup, it's apples n oranges!
Soundbars are designed for the person that has a main priority of "compact space with ease of connection." setup.
With these expensive soundbars you are paying for tech that may simulate sound better than less expensive soundbars.
If it's great sound it's not compared to a true surround setup.
If someone wants to believe that's the case, it's on a personal basis and there is no arguing that.

good price but tech is buggy. sound cuts put every 20 minutes on brand new Sony Atmos TV top line connectors. I'm on my 3rd, buy the Sonos
I had the same issue and was frustrated with it but it appears that Bose standby is default to 20 mins and that was the issue. After removing that, problem solved but I like sonos better than Bose. No option but to survive since I am out of return period

Yes this is confusing and actually you kinda have it backwards.
This "numeric convention" applies to discreet channels to specific speakers not to some "transducers".
You even kinda pointed out what's actually going on here:

That's all a soundbar is doing, using tech to simulate sound.
The irony here is this same company used tech to simulate sound back in the day, they made a lot of money doing this.
BTW this is not a "3.0.2 soundbar" object based soundtracks are built on the core 5.1 surround.
