How? How does a well made knife (whether for EDC or not) become "old tech"?

A lot of makers are heading towards more stainless steel options like S35VN.
I personally think 1095 is an amazing steel if you actually use your knives and need to touch up in the field.
S35VN will hold an edge longer but 1095 will sharpen easier and is more forgiving to hand sharpening.

1095 can also take a beating. I have an ESEE that I don't think I could break if I tried.

Any good fixed blade brands that uses S35VN? Doesn't seem like ESEE and Ontario is going for it much.

For anyone worried about this rusting...

This knife is going to be identical to the ESEE 3 in 1095 that has a great coating on the blade. I have an ESEE 4 in S35VN and an ESEE 3 HM in 1095. I've taken both in the woods, and much prefer the 3 since it's so durable and easy to sharpen. Also, I daily carry an Izula II with the coating, and have had zero problems with rust on any of the 1095 blades.

This is a great knife from a solid company, and it will most likely outlive you.

I have Esee 5 and Esee Laser Strike.
On my 5, I stripped the coating and then used mustard to etch some tiger stripes into it. It actually looks really good.

True, both companies don't offer a big selection, but they do offer some.
There's a lot of vendors online but these are the easiest to navigate/narrow
down that I know of.

As far as what's good is highly subjective.
People have different tastes.

It's all about how you're going to use it; a knife designed to be an EDC isn't nearly as likely to be left out for any real length of time (I mean it couldn't be if you actually carry it "every day.") so I can't imagine it's a real factor for most.

I do prefer a bit more in the way of corrosion resistance in some of my larger outdoor knives, but even then CPM‐3V is top notch, would cost like twice the price, and is still technically not stainless. The two 1095 knives I use most often are similar, smaller, Esee knives and I never even have to think about the fact that they're not stainless because I can't really imagine not wiping them off real quick before resheathing them throughout my day.
