If you use Android try symfonium music player a try. I enjoy the experience more than Plexamp. And for audiobooks the chronicle app.

I've never needed transcoding or anything like that, but lately my content has gotten dramatically larger (and that's not even jumping to 4k). E.g. I just went on a trip and wanted to access some content while I was away...but the movie was 30+GB and it took a LONG time for me to grab it from my home computer where the cable modem can only upload at ~20mbps max. Also my wife wanted to put some episodes on her tablet for the plane ride and a single HD episode was coming in at like 3-4gb which quicky filled her available storage...gone are the days where a 1-hour show comes in at 750-850mb so transcoding and ability to download smaller sizes in apps would be nice.
I'm still debating buying this or trying Jellyfin. (I recently bought an HDHR)
While I've never had any issues downloading content locally with Plex I had to laugh at his "night before a flight" problem. Just apply the KISS principle. In the time he spent firing off an angry email to his staff he could have just copied some content locally (USB or wifi or SD card), and fired up VLC on the airplane.
I've always been a fan of hosting all my own media on my NAS and that's why I have Plex w/Plex Pass (purchased years ago at a discount) to begin with. I don't use any streaming services.
I've been really impressed with symfonium. I like it has the ability to add additional sources from plex servers. Offline listenings important he makes it easy.

Took me 10 seconds to get to it. Not even remotely "impossible."
Also not sure what you mean by on-demand music you bought being shuffled with other music. I can stream any music I've bought without other music being put into the stream. I stream any album I've bought with no issue and playlists I've made from albums/songs I've bought play exactly what I want.
I don't like the Amazon Music app much at all, but I don't see anything like you say.
When you select any of the individual tracks it starts playing a random song within the album .
I guess this is what I don't understand. I've always used VLC media player (free) and it plays pretty much everything. How is Plex soo much different?

I didn't realize that was a paid feature. I thought I got hardware transcoding with the free version

There may be other devices, but that's straight from Plex. I was 99% certain my "My Cloud Home" included hardware transcoding but that doesn't seem to be the case. I hate that device anyway.
If you're the only person using it and vlc does what you need, then plex is unnecessary.
