1/4 cup seasoned rice vinegar
1/4 cup mirin ( sweet cooking rice wine )
1 cup water
2 cups soy sauce
1 cup brown sugar, divided
3/4 cup white sugar, divided
1 tsp. ground ginger
2 cloves garlic crushed
1 1/2 cup honey
1. Combine everything except honey, 1/2 cup of the brown sugar and 1/4 cup of the white sugar in large saucepan and bring to a slight boil. Lower to simmer and simmer for 15 minutes.
2. Add honey,remaining 1/2 cup brown sugar, 1/2 cup white sugar and bring to a boil. This mixture will rise and foam to double in size. When it does this take it off burner and cool.
3. Store in the refrigerator. It stays fresh for use a long time.
