I don't think that's 100% true. I've heard the maillard reaction helps add flavor and seal in the fat.

i am in for only 1. no more room in the kitchen.


i always wonder why all my beef patties didnt come out flat like in the restaurant. now i get it.

It's always tempting, but you're not supposed to press down on your burgers - it squeezes all the juices out.

I'm super cheap and have been using a dinner plate with a heavy water bottle on top of the plate for my burgers for years. Now it's finally time to get a legitimate tool.

Smashed burger are smaller and are seared so fast that the juices stay in the patty instead of being squeezed out. Kinda like searing steak.
