Three things make a DELICIOUS sardine.
- It must be packed in oil.
- It should come from the North ATLANTIC. Off the coast of Europe, basically.
- Smaller sardines (called brisling sardines) are generally more flavorful. Also, on brislings the skin and bones are virtually imperceptible, for people who want the nutritional advantage of skin and bones but struggle to eat them.
Some widely available delicious sardine brands:
King Oscar
Look; sardines can get to 11/10 for flavor. 12/10 for flavor. 15/10 for flavor. But such sardines also get very expensive, boutique, and hard to find. King Oscar is basically 9/10 for flavor and 10/10 for availability in any grocery store.
MW Polar
You can get this on Amazon. And provided you enjoy heavy smoke, it is actually tastier than King Oscar.
Crown Prince
Another tasty brisling widely available in grocery stores. But more expensive than King Oscar, inexplicably to me, since it does not taste better than King Oscar.
Brunswick
Okay. This one is a bit of a step down in texture, as it is less firm. But the flavor is still that of a good brisling. And, as with the other brands I'm listing, availability is high.
Matiz, and Bella
I don't have these as much, because they are not brisling. But these are large sardines done right. They are delicious.
I suppose this is all to say... If you're a sardine nut like me, and wanted to fill your pantry with this deal, but haven't had Wild Planet before, maybe try a can first. These are PACIFIC sardines. And large ones at that. Wild Planet's schtick is sustainability. Not max sardine flavor.

You don't cook these they're supposed to be eaten as is. They're not flaky - comes in solid sardine form. You could put it with rice but most eat it with bread.
I picked up a lot when Costco carried Wild Planet and they were consistently fresher.
