My version of macOS (13.2b) is eating 20 GB, "system data" 155 GB, on a 512 GB drive.

I saw someone say they can get 4k 120hz if you use USB-C to Display Port, but if your Monitor/TV only has HDMI it'll limit it to 4k 60hz. I can only get 4k 60hz with a M1 Pro MBP 14 on my LG C2 which only has HDMI inputs. I'm tempted to see if there is a cheap used M1 Mac Mini 16 GB / 512 GB in the coming weeks to use that on the TV instead of my MBP since every time I unplug the HDMI cable it resets the input settings on the TV for it.

HP had for a week just until recently a solid sale on their business lines. People were buying laptops like EliteBook Pro with Ryzen 6850U 32GB RAM and 1TB drive, which CPU is on par with M Pro processors and much much faster GPU and apparently 32GB RAM is large enough for running concurrent VMs, large databases and AI simulations. I debated until I missed it, and instead found their ZBook with 1260P and 16GB and 512GB drive for $860. It comes with three years warranty. The 1240P was even cheaper at $725. These are upgradable scientific machines. Similarly, prices on business class mini form factor workstations (when on sale) are inline with Mac mini, but you get serviceable and upgradable machine. Intel 12th series has AI accelerators as well. Such deals are good alternative to $500-600 Mac mini, I think.
