Why not just buy a whole ginger? And if you want to grind it up
I tend to prefer things as close to their natural state, but to be fair, dried ginger is more potent (about 4x), more shelf stable, and likely cheaper and more convenient in most cases.

Organic is an overrated term created by the food industry, especially in the US, to charge higher prices for normal food. They have accustomed us to accept substandard foods as "normal" and to pay a premium for normal (organic) foods.
In other countries (Peru, for example), most produce is organic by default, without the massive mark up.
