If it was at 4K I'd say go big, but if you're content on 1440p, then just got 6800xt and be happy.

6950 XT 1440p/120 Pro gaming vs 6800 XT 4K/60 casual gaming, depend what you need.
H265 422 4k24p, 4k30p, 4k120p from my Sony a7siii camera. I currently have a 5900x cpu and it is a nightmare to edit on since my encoders aren't great for this codec. Was thinking of going Nvidia to help with this while keeping the AMD cpu, or going Intel for its Igpu decoder and getting an AMD power house value GPU for gaming and just let the Intel iGPU Decode.

If we talking about GPU video editiong because you need available CPU cores for other simultaneous tasks - it's only Nvidia GPU with CUDA cores. If you making money with video-editing - minimum 4070 Ti, if not - let's say 3060 Ti minimum.
AMD.. well, I really like it, but only for games without ray-tracing, not good for any work - not encoding, not GPU virtualization, not machine learning, I wish them good luck to improve all that but they tried many years and still behind Nvidia...
