Yes you could go faster and turn harder on a cervelo, but for the use case of a city e-bike I would go with a low standover frame. I am 6'3".
In regards to expensive ebikes and not wanting to go anywhere the bike would be left unattended while locked, in major cities there seems to always be a scumbag that wants what you have. If it's a reference to a decent lock with an insurance disclaimer attached to it, read that insurance disclaimer. You'll see nearly every single lock sold with an "insurance" disclaimer attached is null and void by default. It only covers a failure of the lock itself by manufacturer defect and the lock itself must be presented to the manufacturer for review.

Women have often been riding diamond style frames and men have often been riding step-through frames for many decades. Why do people like you insist on holding onto sexist ideas from your great grandparents era?

Makes more sense to have the angle on a Men's bike to protect the McNuggets.
I would speculate it's similar to how women used to ride sidesaddle on horses in the olden days, so that spectators would not see up a woman's skirt when she's getting on or off.
Or yea, cause the old dresses were so heavy or something.
