Stainless steel cookware takes very different technique than others. Also, takes a lot of patience too to watch the oil heat up to the right temp (but not too hot). If you are like me and don't have patience, get a carbon steel cookware instead. Just need to season it properly and it will be nonstick with use.

Everything you said about stainless is BS

It takes less time to prepare your ingredients than to heat the pan

It's extremely easy to know when the pan is hot enough (and on a good quality pan the window is large)

Being non-stick is a problem, not a benefit, for most recipes.

Being non stick is a problem for most recipes? Lmao, must be why the market is flooded with non stick cookware. Let's see here, fried eggs, rice, fish meat, etc all benefit from the surface being nonstick, but I guess we can agree to disagree on this matter. With regard to your other point, my point is that it takes the person having to watch the pan closely to make sure it's hot enough but also not too hot.

Non stick is a problem, period. There isn't a safe non stick material to use. If you're at all concerned with your health, SS or cast iron. Neither of which are non stick yet you can slide eggs and fish around on them, no problem.
