You mean an infrared thermometer?

They normally take a measurement of a large area, probably not great for capturing the temp of a 1/4in pipe.

The laser they often have on them are just there to point at things and make people misunderstanding how it works, resulting in the user using it wrong.

Also, there's no way to clamp it to a pipe.
On a temperature scale from "Cold" to "Why did I put my hand on that da.. pipe?"
To measure pipe temperature.

to add to the comment above infrared also requires you to know the reflectivity of the surface you are measuring if you want the temperature to be accurate

Yeah, if you read the directions on these things you'll see that they measure in a cone shaped area that gets large quite quickly the further the measured surface is from the device.

Here is a "non-scientific" description on how emissivity significantly affects IR thermometer readings.

A clamp thermocouple which works by surface contact is not affected by this sort of emissivity issues and would give a "truer" temperature. This is demonstrated later in the video:

Cans could be too thicc for this clamp. Also, bottle necks are made of glass, thermally insulator, so you can only get the outer temp.

Nice idea, but for brews it will have very few uses. Unless you have a legal distillation license, that is.
