The internals are exactly the same, but the casing is different. Aluminium is the material used in the regular watches, and it is a softer material than stainless steel. This makes it much more prone to getting scratched. However, the matte aluminium also does not show scratches easily. It's also lighter. The aluminium watches also come with a type of glass, which scratches more easily than the Sapphire crystal found on the stainless steel models.

Stainless steel is heavier, more premium looking, and much harder than aluminium. However, since it is shiny, it also shows scratches easily. The one advantage of buying the silver SS watch is that it can be buffed with an appropriate cloth (cape cod metal polish), that will remove minor scratches and return your watch to a polished state. The price delta between aluminium and stainless steel isn't usually justifiable, but at a 100$ delta between the Aluminium S8 vs Stainless Steel S7, or a 170$ delta between Aluminium S7 vs Stainless steel S7, the SS S7 is justifiable.
