For example, Thermal past application and CPU cooler install is actually pretty imposing, a youtube video will help a lot but there is a real risk of bent pins and performance risk of improper installation. Will most people be fine? Yep, but is there real risk to someone who just wanted a $1,600 system? Absolutely, especially for a first time ever build.
Also, the ram you listed (F5-6000J3636F16GX2-FX5) isn't listed as compatible with the mobo you listed. In most cases will they both work? yep, will it possibly limit the ram speed? yep. But if it doesn't work correctly, diagnosing that is difficult and fixing requires returning within 30 days at most retailers. And that isn't something most people even know to check or how. https://www.gigabyte.co
And newegg was listed for most of your parts, they have a history of bad customer service and limited support for open parts, not always, but sometimes. Not having a unified system warranty can also be a big deal and requires a ton more technical knowledge to diagnose and work with various OEMs for support if needed.
And I would personally include at least $25 for a semi legit windows key. Can you run windows without a key, yes with limitations that aren't on a prebuilt. Can you risk malware to get it free? yep. Can you get a $5-10 defo improperly used windows 10 key from ebay and upgrade to 11? Yes with some risk microsoft will revoke it and with time that you wouldn't have to spend on a prebuilt. But as someone who spent a lot of time, including on very suspicious bot reddit threds, trying to find an affordable legit copy, it is a bit disingenuous to leave it out entirely.
So risk, extra technical knowledge and an extra $50 for a system that will push mildly better frams in the shorterm but with better long term potential. I know I'd pick the self build but I don't think it is for everyone, certainly not the default choice.
Please, I beg of you, post these so called better deals that are to be had. Not claiming this one is super duper, but it is pretty good for what has been available.

People seem to not care about the branding for each component which can play an important role in everything from bottlenecking to future upgrades. Not to mention the case itself, case fans, etc. Just look at it like a laptop, full stop.
Noctua? Who cares! Case? Looks good to me! You can see how a case performs just by looking at it? Yep!
They fill these PC's with a lot of lower grade shit like the RAM, etc. If you build yourself, you can get name brand throughout. You might pay a bit more but its like people who don't appreciate what Prusa has to offer with 3D printers.. no changing those peoples minds.
It's like any other products put together.. not each Indvidual item is treated equal and quality ultimately does matter.

the time to buy was last year and now supply is all dried up and no need to sell them any lower. prices have gone (slightly) back up.

$149 more for pro assembly:
https://www.microcenter
If it must be cheaper than this, you can drop down to a 4070 next week to cover $149 assembly cost.
You can also take one of their many bundles to get a 13700 or 7700 DDR5.
