looking to get knives for new place, these good starting point? just looking for some steak knives, and a chefs knife and paring knife

Can anyone enlighten me on the differences among Classic, Ikon and Classic Ikon? Are they just esthetic? The Chinese chef knives I am looking at are in all three series with the same price tags.

Get victorinox. They last, wash great and cost a fraction of this.

Good point; there are a number of brands that cost much less and more than adequate for 80-90% of all users. Russell comes to mind as well. This one's been around for years and I swear it's a price mistake: https://www.costco.com/russell-10...77377.html . I use this one and think it's a great deal even if they only gave you one for the price. A lot of people are happy to toss their knives into the dishwasher no matter what you tell them. These Russells would hold up just fine to that level of abuse. Anything with a molded handle and an NSF rating can usually handle that.

Also check out Webstaurant store or really any retail restaurant supply store.

It's silly that they include those junk pairing knives with the ikon set. That's like getting a steak at Morton's and having them offer a free Twinkie. Not in the same league.

It's definitely always worth it more to buy it from some place other than China.

Don't know much about the others, but those steak knives are crap. I've owned them, and they're not quality just because they're "Wusthof". They're stamped knives, not forged, and they do rust over time in small areas, in addition to just feeling cheap and flimsy. The tips break very easily and they're not particularly sharp. Wusthof sells a much nicer, forged steak knife set, but as your would expect, it's significantly more $$.

I love my Victorinox chefs knife and other larger knives. The Victorinox steak knives work great, but they feel cheap in a way their other knives don't too me. Not a big deal for me, but it may be for some.

The pairing set seems to be the best value option. The 3 necessary knives are chef (8" or 7"), bread knife, and pairing. These 3 knives can do 99% of the workload in a home kitchen. Other knives are the chop knife for bones/veggies or fish knife for fillets or deboning.
