I have been experimenting with "1 minute" cooking at pressure and then not hitting quick release for a while, it is tough to get it just perfect with varying egg sizes.
Fresher eggs have a smaller air pocket which makes them harder to peel and more likely to crack.
We have chickens, so the eggs may be between 1 hour to two weeks "old" compared to sometimes 6 weeks plus in the grocery store.
The only way to get sulfer free, easy peel eggs is to start with boiled water, drop in, 15 minutes, then ice bath. The proteins coagulate the fastest, since the temperature is boiling from start and have less time to stick to membrane/shell. 15 minutes allows the yolk to cook completely without forming that green sulfery layer that makes your farts smell like death.
Instant pot starts cold, and gives eggs time to stick to shell. Same with cold water. Also have sulfer issues with instant pot, and eggs don't cook evenly every time. Sous vide is the worst for hard boiled, and best for eggs benedict, and soft boil applications.
