If you're doing continuous recording the endurance cards are the way to go.

There are also 256 and 512 sizes available that appear to be slightly cheaper per gb. Thoughts on buying one of those instead? I don't buy many SD cards so I have little experience... Thanks in advance.

I've been using a Samsung 256GB card in my cell phone for years without any problems. Works perfect, read and write speeds seem fast. I would buy again

Depends on how much space you'll need and use case. If you're going to occasionally put files and delete them, then 128GB will be fine.

If you're going to use in a dashcam/security camera, then get the other deal for the Samsung ProEndurance. 128GB will also be fine, it will auto delete oldest files so will keep x hours of video

Really depend on your uses on what you need the SD cards for.

As noted by others, dashcam and security cameras will need a high endurance due to constant use. You will need a higher read and write speed for cameras and drones if filming in 4K and higher fps. Storage size is a bit more personal preference depending on how often you shoot or need to change out the cards, but generally, 128GB or 256GB meets most people's needs, even professionals since they offload those to an external storage after a shoot.

Do note that a lot of these SD cards advertise "up to" read and write speeds, but what's important is the minimum speed rate.

Buyer beware. I purchased 4 of these cards last year. One died within a month. Samsung wanted me to pay to ship it back to them. Which IMO, is ridiculous. I'm not going to pay more of my own money to ship your poorly manufactured product back to you. So I took the free route and returned all of them.
